Winter is settling in and I have a hot water bottle on the go almost 24/7! This leek and potato soup with a beurre noisette drizzle is the business for this time of year! Hearty, creamy and healthy (ok, minus the cream and butter ) and full of my favourite vegetable of all time – delicious and delicate leeks! Leeks are so underrated in my opinion – a sad oversight considering they are so super versatile in anything from sumptuous risottos (try leek and taleggio risotto!) to chicken pies and of course this kind of heart-warming soup.
