Classics are classic for a reason – obvious enough to say, but once you’ve made your own tarte tatin or dauphinoise potatoes or hollandaise sauce you really understand why these are the recipes that have never fallen into obscurity through the years – they are just too darn delicious! I love that Ilse (from the delectable Food Fox) can take a classic and wring the changes with such resounding success! Updating a famous dish is not as easy as it looks, but the soft, buttery pears and caramelly (is that a word?), earthy pecans are just the perfect way to see us into some cold weather baking!
